FRANZISKA

Ingredients

 

Amount

Milk

 

60 ml

Cream

 

22 ml

Passion fruit juice

 

23 ml

Mango syrup

 

8 ml

Honey

 

1 tbl sp

Heat and stir until the honey is dissolved.

FRUITED MAYONNAISE

Ingredients

 

Amount

Passion fruit puree

 

½ cup

Mayonnaise

 

1 cup

Blend well. The flavors intensify if refrigerated at least 2 hours. Use as a salad dressing with fruit or chicken salad.

LILIKOI SAUCE

Ingredients

 

Amount

Passion fruit puree

 

1 1/4 cup

Sugar

 

1/3 cup

Cornstarch

 

1 tablespoon

In a 1 to 1 1/2 quart pan, mix sugar and cornstarch; add puree. Stir over medium-high eat until boiling, 4-5 minutes. Let cool; stir occasionally. If made ahead, chill airtight up to 1 day

PASSIONFRUIT MARINADE

Ingredients

 

Amount

Passion fruit concentrate

 

2 oz.

White wine vinegar

 

2 oz.

Sweet ginger

 

1 tblspn

Salt

 

1/2 teasp

Pepper

 

1/4 teasp

Stir all ingredients together. Use to marinate cuts of chicken or pork in refrigerator at least 30 minutes or up to several hours. Drain meat; grill or roast as desired.

PASSIONFRUIT RHUBARB SAUCE

Ingredients

 

Amount

Rhubarb sticks washed

 

850 gm

Water

 

1 1/2 tbsp

Caster sugar

 

1 1/2 oz.

Passion fruit juice

 

1 cup

Cut the rhubarb into 1cm/½in pieces. Put in a pan with water and caster sugar to taste. Simmer for 4-5 minutes with the lid on, until soft. When the rhubarb is cool, blend with the passion fruit juice in a food processor.

PASSIONFRUIT WALNUT VINAIGRETTE

Ingredients

Passion fruit juice

 

¼ cup

Salt

 

½ teaspoon

Ground pepper

 

1/8 teaspoon

Chopped walnuts

 

¼ cup

Olive oil

 

¾ cup

Fresh ginger, minced

 

¼ teaspoon

Anchovy paste

 

1 tablespoon

Mustard

 

¼ teaspoon

Watercress, chopped

 

1-2 sprigs

Combine passion fruit juice, salt, pepper, walnuts, olive oil, ginger, anchovy paste, mustard, and watercress in a shaker container. Shake to combine. Pour over salad.

Yields 1 cup

SPICY ROASTED PEPPER SAUCE

Ingredients

garlic cloves -- peeled

jalapeños

fresh orange juice

 

2 tablespoons

lime juice

 

2 tablespoons

kosher salt

 

1 teaspoon

red bell pepper -- chopped

 

4 tablespoons

low-fat mayonnaise

 

4 cups

frozen passion fruit

 

1/4 cup

Roast garlic and jalapeños on a flat-top grill or in a skillet over medium-high heat until golden, about 3 minutes. Remove and set aside to cool.

Combine cooled garlic mixture with juices, salt and bell pepper in a blender and purée until very smooth. Combine in mixing bowl with mayonnaise and passion fruit purée; mix well until a uniform colour. Serve with Snapper Cakes or other appetizers.
